This actually seems like a very close fight to me, so I will produce an analysis.
First off, their saber abilities. Luminara Unduli was a master of Soresu and maintained some skill in Form V. Her skill in Soresu was considered to be akin to Dooku's Makashi by some, though I consider this to be hyperbolic given her defeat at the hands of Season 1 Ventress. On that token however, Luminara was able to hold her own against Season 1 Ventress with her vision clouded, which is an extremely impressive dueling feat. Luminara also possessed skill in unarmed combat, being capable of defending against the Geonosian Zombies for a short time.
Aayla Secura was a master of Ataru and like her opponent also maintained some skill in Form V. Aayla's skill was such that she was able to defeat Aurra Sing in a duel, which is very impressive considering that Sing gave Qui-gon Jinn a hell of a fight, and Qui-gon's performance against Maul was very impressive. Aayla was also familiar with Jar'kai.
This is edge is actually a very complicated one to attribute. On one hand we have the comparison of their best dueling feats. Luminara held her own against Ventress for a minute while partially blinded. What one must consider however is that this was season 1 Ventress, and she was noticeably sloppier in season 1 than she was in the later episodes. Being partially blinded by the steam is also not as much a detriment as it first appears due to the fact that Luminara's force enhanced senses partially compensate for it. A good deal of the minute she was holding out for was also filled with banter. To put it bluntly, Season 1 Ventress soldily beat Luminara in a fight while Aayla overwhelmed Aurra Sing in a duel. Aayla does possess the greater feat of the two, however we must also consider the mechanics of how their styles play off of eachother. I doubt either of their familiarity with Form V will grant them any sort of edge over the other, so I'll discard that. Form IV expends a lot of energy while Form III is about tiring one's opponent out. I'd have to say Luminara gets an edge in how her style stacks up against her opponent's. What this comes down to is that Aayla possesses the greater feat, while Luminara's style is more effective against Aayla's. That being said, Ventress has proven that a strong enough offense can break Luminara's defense, and with Aayla possessing the greater dueling feat of the two, she has a good shot of doing that. I give Aayla the edge as a duelist.
Now for their physical capabilities. Luminara is extremely flexible and agile as a result of both her Jedi training, and her mirialan physiology. She was also known to be very fast, and capable of performing impressive acrobatics. She was also physically strong enough to wound undead geonosians while unarmed.
Aayla, as a result of Jedi training and her mastery of Ataru, was very skilled acrobatically, and was also very agile.
Physically, I'd say Aayla holds an edge in acrobatics due to her specialization in Ataru, however Luminara matches her agility and supersedes her in all other physical areas that we can judge. I give Luminara a physical edge.
Now for their force abilities. Luminara was a powerful telekinetic, being capable of matching Ventress's force push with her own, hurling debris at her opponent, and holding up collapsed portions of the Illum cave in conjunction with Barriss for a long period of time to avoid being crushed.
Aayla was exceptionally skilled in telekinesis as well. She was also known to be capable of force stealth and Jedi mind tricks.
TBH I cannot find any good telekinetic feats for Aayla, and her other abilities aren't applicable here, so Luminara gets the edge as a force wielder.
All in all this was a very difficult and complicated match-up to call. I consider Aayla the superior duelist and Luminara the better force wielder, however I don't consider Luminara's force edge to be as significant as it looks on paper. The two are primarily duelists, so this will mostly boil down to their capabilities as duelists. While I gave Aayla the edge as a duelist, Luminara's other edges still serve to supplement her dueling prowess. If Luminara is pressed, she could use her telekinetic superiority to hold Aayla at bay while she evades her with her flexibility. I think that with Luminara's physical edge and force edge supplementing her defensive style, she could hold back Aayla's superior swordsmanship and outlast her after a hard fought duel. I declare Luminara Unduli the winner!
