Ehhhhhhh. It depends on your opinion of Luke at this point in his life. If RoTJ Luke=Vader, then he'll solo. If ROTJ Luke was let off lightly by Vader and is actually more on par with AOTC Anakin, then Grievous can't save him.
Dooku absolutely trashes in an all out duel. Neither Grievous nor Luke have an answer to Force Lightning or his tremendous TK ability. They have a shot at sabers, although the Count's performance against Skywalker and Kenobi do not make it likely they'll be able to overcome him.
Dooku most likely losses at Sabers only because both Luke and GG are comparable to him as duelists. In an all out duel, he'd ragdoll Grievous or subdue him via TK, and would likely do the same to Luke.
Legends Luke takes it, new canon Luke gets stomped.

Yeah, Grievous is pretty useless here. It depends entirely on how awesome Luke is. There's...a very small window of Luke's life where Grievous is even vaguely useful to him. If he's sufficiently strong, he'll take Dooku by himself. If he's too weak, Grievous is useless.
People need to show me what feats ROTJ Luke has that suggest he has better TK defense than Kenobi. Or how he's magically going to have a better defense against Dooku's lightning than one of the greatest swordsmen in the Order's history who specialized in fighting DS warriors; Sora Bulq. If they don't there's no reason why Dooku won't force crush Grievous like Mace did and then snap Luke's neck through the force, or electrocute him.
Hell Sidious' half assed lightning was too much for Luke to block. The Count's lightning while not Sidious level has the capacity to kill Force sensitives like Night brothers and Kiffar warriors. I'd bet that Sidious' initial burst of lightning was weaker than Dooku's maximum.
