Choose whichever characters you wish to have bar anyone before the birth of Anakin or force entities. If you choose a force sensitive, know that they are limited to using their powers for only direct combat; they can't assassinate someone with force-choke from a distance for example or use force storms.
Morals are on and characters are aware of who they're around; so pairing Yoda with Palpatine is not a good idea for example. Also using jedi to assassinate other jedi or politicians won't work either unless you can explain why convincingly.
Not all positions must be filled
Let's see who can come up with the best team(s) and give a short explanation why:
You don't need to do all the scenarios but I've provided you with plenty of options.
Scenario A:
You need a group of people to skillfully take-out Supreme Chancellor Palpatine during a Senate Chamber meeting.

Jedi team would be the best, if it can be after they discovered who Palpatine truly is. Assassination isn't really that different from going to the guy who will obviously never surrender or anything and face him in a fair fight. That's at least for many of the Jedi, and in this one they would also have a pretty good reason to do their best.
Mission Planner/Head Assassin: Mace Windu - pretty obvious, the guy has the morals to do it as somebody who's not going to do dumb stuff because of "the Jedi way", like Galen letting Palpatine go, etc. And he's simply one of the toughest guys in the mythos. Assassin 2: Mara Jade Skywalker - absolutely perfect skillset, no contest. Assassin 3: Jaina Solo - perfect skillset, experience, and morals for this kind of stuff. Assassin 4: Tholme - far behind Fisto tier as a combatant, but one of the few Jedi good for the task. Technician (optional): any legitimate kind of a bounty hunter - advanced combat tech of Fett-type guys is a great addition in a brawl of Force combatants; adds something more to the mix, something more unique and with this thing being an assassination, not a random battle, the Jedi can be perfectly prepared for tech-stuff Jango-type-guys are going to use Muscle (as many needed up to 5): not really needed imo, but put Cade Skywalker, Kyle Katarn, Kit Fisto, Quinlan Vos and Corran Horn and team slaughters.

The Jedi have become aware of who Palpatine really is and decide that he must be taken down at all costs. Best fighters are present to get the job done once Sidious reveals himself.

Dathomir army (includes Talzin, Maul, Ventress, Daka)
The two Dark Side sects put aside their differences and wage an all out attack on the temple, they will resolve their dispute once the Jedi are out of the way. The combination of the Sith and the Dathomirians is too much for the Jedi to handle.

conflict of characters. Boba hates Mace's guts and unless you're referring to jedi Dooku and Krayt, they're going to fight.
can the three "darths" get along without the rule of 2 conflict? Perhaps Vader and Krayt would be trying to replace each other as Sidious's apprentice.

To Tyranus: If Dooku knows that Sidious would kill him, I think he would side with the Jedi
Krayt: Similar to Krayt and Luke vs Abeloth, Krayt would see Sidious most likely as bigger threath.
Krayt didn't become the Emperor of the Galactic Empire and found the "One Sith" as it's sole, unchallenged leader to take second place to anyone. That said, I think he's smart enough not to start sparring with Vader and Sidious while they're trying to kill the Jedi.

Even ILS's team has poor chances of taking the entire Jedi Temple, lol. Anakin and 501st succeeded through surprise and the fact that majority of the Order's powerhouses were offworld. The fact that there were 3/12 Councillors left speaks enough.

Yeah. It's basically Sidious, Vader and Krayt trying to occupy Yoda, Windu, Anakin, Obi-Wan, Koon, Fisto, Shaak, Yaddle etc, while the Sith Troopers deal with the less prominent Jedi. Even with the element of surprise it'd be a total bloodbath on both sides.
