While I will say that Dooku is more skilled than the opposition, the whole "he knows his moves" theory works both ways. Plus, Dooku showed feelings, if not a certain type of love for QGJ. And we know what something like love can do to a Sith lord (see Luke beating Vader). That moment of hesitation could be all they need to capitalize and win. People often underestimate QGJ and forget he was a great swordsman and extremely strong with the living force.
BUT, if they can't get that moment (no matter how small) of hesitation, then Dooku decimates them. Even with the pause, he would still likely win but there would be a chance for the duo to overcome him.
