Not from an OT perspective. I doubt it was always the idea that Jedi should be trained by babysnatchers. But that it was something you could learn at a later age. Lucas always compared them to monks and monks join monasteries at later dates.

The whole training-Jedi-as-kids is something Lucas came up with while making the prequels.

Yes, but he didn't specify by how many years. Maybe to start training a Jedi is best at the age of 16-17... and Luke was already in his twenties or so. We have no idea what was meant. Maybe he tried to dodge the train, risking Luke to be another Vader.

But we do have OB1 in ANH saying that when he met Luke's father he was already a great pilot. Now, I'm very sure that Lucas at the time did not mean that Anakin was a kid pod racer driver. So originally in the OB1-Anakin story, Anakin was a lot older, the same age as say Luke in ANH. And OB1 decided to train him.

We also know that OB1 tells Yoda that he was reckless when Yoda trained him. Now, we see Yoda only training little kids... reckless?? Hard to believe.

The point is: Lucas was a great visionary in the 70s and 80s. But... he was not a great geofictionalist. Not like Tolkien or Frank Herbert. He didn't flesh out his universe very well. Plus he changed his mind about it between the 70's and the late 90's. "About a great many things..." So we get an awful lot of strange inconsistencies in these movies. The age at which people were to be trained to become Jedi is (just) one of them.
