I just watched crouching tiger again and man the fight with shu lien and jen still gives me a thrill damn!!

Yeah the Lobby Scene in The Matrix takes the cake for me
It was great.
I also liked the Neo vs 100 agent smiths
The opening fight scene in equilibrium, as well as some others in it
and the ending scene between Spiderman and the Green Goblin beginning at the bridge.

The Matrix reloaded fight with Smith & neo was awesome, also the fight between the machines & the Zion in Revolutions was nuts!

X-Men had a good fight at the end, also Charlies Angels 2 with Diaz & (the older chick??)

Brad Pitt's final fight in Snatch is a good one.

in comment to "curl up&die" yes Yoda did lay the smackdown and it was kick ass, but still the Zion scene is a great all time favourite,
