Seraph a former one?
Where's the proof? Just because Serpah, as an exile, has program parameters that makes it possible for him to escape agents, does NOT mean he was a former one.
ALL former ones chose the door to the Source and rebuild Zion.

Smith simply met Seraph off camera. The fact that he fought Neo to a standstill doesn't prove anything. Neo used kung fu and didn't even alter the code, so it's unfair to say he is at the same level as Neo. Martial Arts level, maybe, but not overall code-bending ability. He is a seraphium-like exile program, who has some connections to the Mero and Oracle. Other than that we know close to nothing about him.

Seraph is a program that was helped by the oracle, and now he protects her. He is what we have seen to be the greatest fighter in the matrix besides Neo. The short fight between him and Neo was not Neo at his fullest, it was obvious Neo needed him to get to the oracle, so he was taking more defensive manuvers the entire fight. Kind of like toying with him the entire time. I'm sure he's never lost to anyone in the matrix, which is why he fought neo in the first place, if neo could survive against him he must be the one.
