There are maaannyy...even back from the Silmarillion.
But in LOTR, there's:
Orthanc, the tower where Saruman dwelt in Isengard.
There's Barad-dur in Mordor, Sauron's lair.
There's Minas Ithil/Minas Morgul (The Tower of the Rising Moon). It was then a part of Gondor built to be a watch against Mordor.
There's Minas Anor/Minas Tirith (The Tower of the Setting Sun, it's more of a city though).
Towers of the Teeth (the Twin guardians of Mordor) it was made by the Gondorians as a watchtower to guard Mordor.
There's the Tower of Amon Sûl, built by Elendil in the Second Age to hold one of the palantiri.
There's the Tower of Cirith Ungol, it was originally built by the Gondorians to guard Ephel Duath.
The Tower of Ecthelion was used to bear the standard of the City of Gondor.
Those are all I can remember.

The three towers? Yey and Elostirion was one of them
Hm there are also several towers on Númenor, I think... like Ermenelos, Rómenna, Ondosto, the Tower on Oromet near Andúnie, Eldalonde, perhaps Nindamos and Elros' Tower near the citadel beside the tree of nimloth.
There was also a tower in Gundabad... and Belegost... and I think also in Mithlond. And in Valmar and on Mount Dolmed... and most probably in Nogrod... maybe in Formenos?
Are the pillars of Illuin and Ormal also counted as towers`?
And strongholds in Erech, Pelargir, Aglarond/Hornburg (Súthburg), Annúminas, Umbar...

also there was a HIGHLY HIGHLY secret tower...that none of you will know of...but i will tell you
there once was a tower....in the most normal of places...this place was SO normal that the tower had to be hidden....in thios tower live turgofin and his minions....who secretly helped fight agains sauron......the tower was disguised by having leaves placed on top and being painted brown...where it was stuck upon a field.....it lasted many an age until....it was cut down..when terror siezed the land
yes this tower WAS THE PARTY TREE!!!!!!!!!!!!!!!!!
(proud of idea...might write story )

Yeah it was... a watchtower... not high but counted as a tower (mostly perhaps because it was built on a mountain )

i think it automatically qualifies as a tower when it's called a watch "tower"...
