Too many to name them all  actually each and every sentence in LoTR or any other work by Tolkien can be counted among my favourite quotes...
Some I like are for example
the words in my signature
the adûnaic lyrics of the ringwraith song
and faramir's words about the dead southron in the TT:EE.......
