Now does "at night" just mean when you're asleep or literally when the sun is down and the stars are out?

But they're saying, if ive understood correctly, that its the irregular times of sleep that messes with the bodyclock which in turn messes with that hormone.

I am sure if someone stays on the night shift and adjusts to it, then the days becomes their nights and their chances are that of a normal person. Lelatonin level is highest at bedtime, which suggests that one needs a regular sleep pattern.
If a person suffers from low melatonin, there are supplements available:
