I'll be honest, a visual medium's (movies and games) fights are just vastly more fun than any from any book. Anyway here are ten of my favorites in no order.
Vader vs Luke Skywalker (ESB)
Malgus vs Ven Zallow
Sidious vs Maul and Savage
Kenobi vs Maul and Savage (Revival)
Mace Windu vs Droids (Clone Wars)
Grievous vs Jedi (Clone Wars)
Sidious vs Yoda (RotS)
Maul vs Kenobi (TPM)
Vader vs Luke Skywalker (RotJ)
Ventress vs Anakin (Clone Wars)

Without saying a word it translates Anakins fall better than all of the prequels did and was much more engaging. I seriously think that cartoon is kind of genius.
Yeah, the microseries was good stuff. Still prefer TCW for the CGI, certain standout arcs, and the inclusion of other elements into an otherwise stale clones vs. droids melee.
The book is one of my favorites and so are the characters. Their conversation shortly before their fight is badass: finishing it off with a well-written fight, resembling the complex relationship between Yoda and Dooku.
2. Obi-Wan Kenobi and Anakin Skywalker vs Count Dooku - Revenge of the Sith.
Much better than in the film. Again, like above, the conversation between Sidious and Dooku right before the fight fits very well. The sheer length of it, Anakin's emotions, Dooku realizing he had been used etc.
3. Yoda vs Count Dooku - Attack of the Clones.
The novelization and the movie depict this duel equally good, in my opinion. Yoda is awesome no matter how you look at it {especially in the book, where descriptions of his speed and skill is exceptional}, and the Count looks like a reak Makashi specialist in the movie.
4. Luke Skywalker vs Darth Vader - Return of the Jedi.
Again, as above, I don't prefer either version [book/movie] of this fight to each other. The emotions, the Emperor, what is at stake etc., makes the fight very enjoyable, not to mention the direct relationship between Luke and Vader that is further explored on.
5. Anakin Skywalker vs Obi-Wan Kenobi - Revenge of the Sith.
The grand finale of the third movie. The environment, special effects, emotions etc. are very well done. I prefer the movie version for this one.
6. Yoda vs Darth Sidious - Revenge of the Sith.
The second grand finale of the third movie. It's the one we always waited for: the two most powerful practitioners of light and dark face off. The ending is my favorite part as I feel it's carrying the ultimate stakes of [arguably] all the movies. I prefer the movie version here as well.
7. Darth Sidious vs Darth Maul and Savage Opress - The Clone Wars.
Great effects. First time we really see Sidious out-right dominate on-screen which was good to see. The best thing was how it was explicitly shown that Sidious was the master, not Maul.
8. Darth Maul vs Qui-Gon Jinn and Obi-Wan Kenobi - The Phantom Menace.
Very well done visually. The acrobatics performed by Maul, especially in the end, are badass.
9. Darth Bane vs Darth Zannah - Dynasty of Evil.
This fight is fairly good. It's a clash between the two protagonists [they are protagonists, right?] of the trilogy. I enjoy Zannah as a character, and all in all, I felt it was a job well done by Karpyshan.
I'd say that's one of the very best of the series, because it's epicness wasn't based around fancy big-scale force powers, it was just two people going at it for five minutes and using the environment.
I agree. To be honest, I'm debating with myself whether Vader vs Luke in Empire Strikes Back or Bane's encounter with Zannah in the Stone Prison should take up my last spot.
Yep. Not only is the fight described well, the book definitely leads up to it and includes a lot of important details: for example, it notes that Dooku is ''sweating'', the exotic description of their speed, Yoda's little comparison between Dooku and Mace etc. Very good.
I'm with ares on this one; I tend to be more biased for visual fights simply because my mind doesn't have to design and execute the complex choreography detailed therein. I can just sit back, relax, and eat my popcorn.
What makes Yoda and Dooku a rare exception is that Stewart did such an amazing job capturing their compelling relationship. Even though I knew Dooku wouldn't be redeemed or killed, I wanted to see the outcome.
Well I agree unless it is an exception. For example, Dooku's fight with Anakin and Obi-Wan is, visual or not, done far better in the book than in the film.

I am thinking about adding Mace's fight with Sidious, but I'm not sure. The preparation done by Sidious with the recording, his inner thoughts about how he had been waiting for this day, Mace preparing the Jedi etc., was very good, but the fight itself was kind of dull.
Vader vs Luke Skywalker (ESB)- This one is fairly self explanatory. Just an epic fight plus the big reveal makes it the most iconic moment of Star Wars. I also consider the opening of the duel to be the best lightsaber sequence in the entire Star Wars mythos.
Malgus vs Ven Zallow- One of, if not, the best choreographed lightsaber duels I've seen. Best of all it doesn't over stay it's welcome.
Sidious vs Maul and Savage- Simply awesome. Love seeing Sidious finally unleashed and completely kicking ass.
Kenobi vs Maul and Savage (Revival)- A well done fight. I also like seeing Kenobi kick some major ass.
Mace Windu vs Droids (Clone Wars)- Just so over-the-top and ridiculous that I can't help but love it.
Grievous vs Jedi (Clone Wars)- Enter Grievous. And what an entrance it was! He takes down several Jedi with ease using not one, not two, but three lightsabers. Sadly, Grievous was nothing more than a chump in RotS.
Sidious vs Yoda (RotS)- One of the only times we see two force titans go at it. It's visually very different from the typical duels which makes it fun and interesting to watch. Especially in a movie that is otherwise packed full of lightsaber duels.
Maul vs Kenobi (TPM)- On here for the same reason Malgus vs Ven Zallow is. It a very well choreographed and fast paced duel.
Vader vs Luke Skywalker (RotJ)- While the worst choreographed duel on my list, the emotion and the music (specifically when Luke gives into the dark side) are the best in the series.
Ventress vs Anakin (Clone Wars)- Not only is it an incredibly well done duel, but we clearly see Anakin struggling and giving in to the dark side. And unlike other parts in the movies, it doesn't feel ham-fisted.
I think Sidious vs Mace and the three other jedi had the potential to be one of the most epic fights, but it turned out to be an epic fail because of the lame choreography.
