Storm was a thief when she was young.
Gambit is hmmmm... Maybe still a thief. Not sure.

Are there other x-men who is/was a thief?

Technically I'd say Jubilee qualifies. If nothing else we see where she pulls a stunt and steals a cookie and some soda. It works so smoothly that its obvious she had experience at it from the time she lived on her own in a mall. plus she stole some clothing pieces from the X-Men when she went through one of Gateway's portals and wound up with the X-Men.
