A lot of people here have already named the must-see ones but I don't think The Chaser has been mentioned. It's a new Korean thriller/horror movie. Really good acting by the two lead actors and really suspenseful too.
Memories of Murder is also a good one. It's a serial killer/thriller movie and again, great acting and plot.

Oldboy was good. ****ed up, but good.

The Host was so-so at best.

Yesterday was decent.

A Tale of Two Sisters was good.

Taegukgi was good. I got teary eyed.

Arahan jangpung daejakjeon was a good popcorn flick. Fun and funny.

I feel ashamed. I'm half Korean and I have only seen a handful.

old boy, hands down. not only the best korean movie i've seen but also one of the best movies all-time. great story, great ending.

lady vengeance was good too but imo its not even in old boy's league. the twists and shocks of old boy were amazing compared to that of lady vengeance.

overall, the ratings for the vengeace trilogy is for me is:
old boy A
Lady vengeance B+/A-
Mr Vengance B

shiri was alright
JSA was good
three extremes was a let down
