Isn't Jean a cheat?

Considering the only reason she's Omega is by tapping into a universal force? You'd think any high end telepath like Moondragon could do it, but it's always the muties...

Unless something changed, that's not something they can pull off whenever.. They need tech to facilitate it, and it usually involves Earth Eternals, which Thanos is not. Also, more Eternals than in this fight.

That's not always true, in the future a human actually get the Phoenix Force.
