I never understood why galactus is powerful.
he only eats planets where as guys like odin surtur can destroy and create galaxys with billions of planets, heck i think a loki can create a planet under his own power.

Galactus is one of the essential beings of the universe along with Eternity, Death, etc... I think he represents Entropy.
And is actually a combo of the last surviving being of the universe that came before this one, and the universe itself.
So he's pretty powerful.

He for sure isn't Entropy. That's one of Eternity's children. Entropy along with his 6 siblings are Marvel's knockoff versions of the Endless (Marvel calls them the "Friendless"). Just like the Endless all had names beginning with "D"'s the Friendless have names all beginning with "E"'s.
In fact Galactus, according to Anomaly/Maelstrom, isn't an abstract/concept at all. Just a powerful cosmic being.

Galactus is more the balance between Eternity and Death.
Also, destroying planets is not his high-end. It's his food.
It's like saying, "What's so great about Hercules? He only eats cheerios for breakfast," as if that was the most he could do.

There's a lot of evidence pointing otherwise.
E.g. the fact that Galactus is a fusion of Galan and that abstract embodiment of the previous universe .
Or that he represents balance, and is the balancing point between the major abstracts.
