I don't supose it looks like it was built out of a ship perhaps? Like a canibalised colony vessel or something?

It certainly has that look about it, Wentar.
Moving along the gangways, you encounter a handful of guards (all equipped similarly- stun batons, riot shields, light armor) and recently-landed spacers making for the main building.
Upon reaching it, guards usher you and the other spacers in through a security door. Once inside, you confirm your theory on the structure's origins- it has all the makings of a old-fashioned ship bridge.
A guard approaches your group.
"Identification," he says, not taking his eyes off a datapad.

What forms of ID do we have on us? I'm guessing pilot's licenses maybe. Doubtful that they would expose us as Jedi.

Indeed not. The guard doesn't give you more than a glance but scans each of your IDs and hands them back.
(We can assume Vlad is tagging along, he made need some prodding)
The guard waves you on wordlessly, moving to the next incoming persons. You follow the direction of the guards until you approach a queue for what appears to be an information desk. A handful of clerks surround themselves with holograms and computer banks, barely looking away from them as people approach them.

Privacy is a big deal here and asking the wrong questions could cause a lot of grief. (He said ironically as he asked to eavesdrop on people.)

I've got Intrusion trained and a score of 5 (1 Intrusion point and all my physical stats are 4) plus Presence for the +3 intrustion bonus. I'll give it a go.

I'm actually combining Intrusion with Perception on this one, but the total comes out the same. You roll well and eavesdrop to a man inquiring about long-term accommodations for his ship and two persons, no questions asked. The exchange is brief, with the clerk telling him where to find the motels and the cost for leaving his ship docked in one of the many hangars. The man brings up the matter of not having enough credits but having items for barter, in which case the clerk moves some things about in his holographic display and lets him know a representative will come by his docking bay shortly to discuss their value and possible trade of services.

Interesting, so we know they take credits at least. That's good for us.
I think I'll ask for a list of mechanics (for ship repair/service) and bars, also ask about short term stay and ship refueling. That shouldn't be too suspicious and gives us places to go in terms of snooping around for Loj'oons men. (Bar's because what ex-pirate doesn't like to drink, mechanics because I suspect some of their ships would have taken damage in the fight and also about refueling in case there is a separate process for that.)

I call that sound logic. The clerk gives you everything you need, but now you have to sort through a long list of mechanics, bars, etcetera. You may need to narrow it down on all fronts.
Refueling can be done inside the hangar you docked in, but you have just one ship.

I assume looking for places that seem discrete is pointless? 
Should I eliminate expensive mechanics and bars? I can't imagine Loj'oon has too many funds to spare and would try save where he can.
Maybe try cut out the really busy places too, since he wants to avoid being noticed too much... or would that be the other way around? Getting lost in the crowd. Depends on how well the locals would have known him I guess.
There must be either mass refueling bays or larger hangars. Did it look like they give multiple ships a single hangar or all individual?
Rumors would be interesting...

Okay getting a little tangential again, I'll summarize.
1. Cut out pricey bars and mechanics, Loj'oon probably wants to save what little credits he has left over.
2. See if I can find any rumors about Loj'oon and his crew in general, see it he's well known here by reputation.
3. Depending on what I discover, eliminate either busy or quite bars and mechanics.
4. Find out if they give multiple ships a single hangar or all individual. If it's the later then we can look into refueling bays.

You would need more than a outside view (which is all you have) to determine what kinds of hangars they possess here.

The information desk has given you all you need; services, hangars, etc.
You can already tell based off of the way things run around here that there aren't many large groups arriving. Lots of individuals. So a large group like Loj'oon's would have drawn a great deal of attention.

Well that gives me a lead in to use to fish for info. I just need to limit the places down to use it.
I can start narrowing the list by eliminating mechanics/repairs that obviously cannot handle large amounts of business at once.
But before I do that I want to go to some bar or similar venue to see if I can find out any gossip on what's being going on around here recently.

Reviewing the listings, you notice that most of these mechanics operate as individuals or small shops that can only handle a few jobs at a time. Quite a few of them operating, though.
As for bar-hopping, you can find that easily. It seems most of the "central chamber" that the main office looks out over consists of such places. You should be able to get yourself thoroughly lost in this hive of scum and villainy easily. How do you want to go about asking questions?
