But they're clearly going to use that Old Fart Hamill so I might as well stop hoping for a better actor.

Maybe they can break out he motion trackers and photoreal CGI a pre-cookie dough version of Hamill in..he is a master voiceover artist and could do the voice to match perfectly, no doubt.
Or maybe the Force makes you put on weight...!

Maybe the light side make you put it on (Luke did fill out between Eps IV and VI...) The darkside does the opposite (Weighty emporer in Ep III looked much less so in VI)
Better idea - no beard, Hamill keeps the weight, shaves his head and does a whole homage to Marlon Brando's Colonel Kurtz from Apocalypse Now, wearing a big flowing robe and being shot in the shadows, from the base he made for his Jedi followers in the jungles of Yavin 4.

yeah we're all having a good time and whistling past the graveyard now, but this is going to stop being funny really quick if he doesnt get his ass on a treadmill and right soon.

Knowing the standard length of time it takes to film & complete a Star Wars movie in post - each movie has taken anywhere between 18-22 months - means that to make their standard release date in Summer 2015 (the usual May slot?), they have to start shooting by this time next year.
Bang out that script, get the older actors in shape, get all the sets ready for a year from now!

Worse comes to worse, there's always CGI enhancing. Little trim here, little trim there, a face lift or six here, some more trimming. Boom, an older yet somewhat fit Luke.
