We can't use any non-canon sources as reference, so I don't know of any canon source that says the population (book based on movie, screenplay or movie) of the Death Star but it's got to be high.

The size of a small moon, thousands of decks, hundreds of spaceships docked... I would guess more than 50 million. Some non-canon estimates say over 1 billion. Whether it's 5 million or 1 billion, that was some serious murder the rebels did to the Empire in episodes 4 and 6. The canteen was probably packed at the time...

This isn't a tale of moral grey areas. The Empire is evil and everyone within it is evil. You are not meant to feel bad for stormtroopers or other bad guys in any way whatsoever- it's straightforward 'evil servants slain by the good guys' storytelling; the sort of white hat/black hat moral story that GL wanted to get back to.

Calling that 'murder' is reading far too far into a simple story like Star Wars.

Moral ambiguity is for the EU. The films really beat you over the head with the simplicity of good vs. evil. They're too straight forward for grey areas.

what about the stormtroopers that have thought since the battle of Geonisis and served since the beginning of the clone wars? What about the stormtroopers who weren't "bad guys" and had families?

Those people weren't in the movies.

It's being discussed in the movie 'Clerks'.

No humans were on the death star. Please keep in mind that this world is not filled with humans. They are all aliens, even though they have human actors playing the parts.

In a galaxy far far away... Humans don't live in a galaxy far far away.

The Eddie Izzard Death Star canteen sketch that you reference is genius.
Can't post links (including yours) as a newbie but go to YT dot com foward-slash watch?v=Bq03xebtbeU

I saw a comedy sketch some time back where Darth Vader was in this room in the Death Star and a female version walked in dressed exactly like him, except she was all in pink. Their eyes met across the room...
