Kratos can take on multiple foes and would not solo Lotr. Don't get crazy.

Sauron's best feat is flinging some scrubs back, that's hardly a big deal in the grand scale of fiction

MovieLOTRverse is mostly just peak human mooks with street weapons

The notable characters don't have anything above building busting, which Kratos' own strength feats exceed, to say nothing of him outclassing the whole verse in speed by a gigantic margain

But that's offtopic, the point is, lack of flashy collateral damage with every attack doesn't denote that a character is weaker, especially when he has notable strength feats that put him above the opponent who doesn't have that many good strength feats

There are no levels of strength the writers adhere to. You can either hurt and kill someone or you can't. Kratos can be hurt and killed.

Sauron has greater power than Kink or Dorf with his weapon. Period. He's a lot more powerful. Period.

Just think about who Sauron is flinging back. Just some cannon fodder foot soldiers. Twi beasts handle them just as easy. And Link handles Twi beasts even easier than that. And Gannon Leaps and Bounds stronger than the leader of the Twi Beasts.
