I know, it's no guarantee of a short duel. But it also doesn't make it a long one, does it? The fact is that we only see a tiny amount of fighting. That's all we can say for certain. Suggesting a lengthy duel happened off-panel is entirely speculative.
Eh. They dueled the entire duration Dooku was spamming lightning at the other two, and then from the time the Mandalorian said "Three! Prepare your rockets!" to when the blast erupted.

If by "spamming lightning" you mean the one burst we saw him shoot. Plus, it's not like we see Dooku shooting lightning for a minute or so in other stories.
Well, let us look at it this way: According to Star Wars Episode III: Revenge of the Sith Scholastic book by Patricia C. Wrede on page 165, the amount of lightning that Palpatine unleashed at Yoda is the most he is capable of pouring (about 20 seconds). It seems like the longest Dooku has ever unleashed lightning was against Savage Opress for about 8 seconds here, and he showed no signs of weariness. I would place a safe bet that the fight was longer then 15 seconds of direct combat, which was how long the Darth Malgus vs Satele Shan fight was.

Mace had time to show his assumed clear superiority over Maul but he didn't. Just like Maul had time to show his clear superiority over Secura which he did.
Either way I think it's pretty clear from the scene that Maul can put up a fight against Mace. And the whole A>B>C thing (of Mace beat Sidious who stomped the Maul brothers therefore Windu also stomp both Maul brothers toegther) clearly doesn't work. In fact it rarely has worked in SW.
