I'm afraid I don't know much about the Vong. All their technology is bio-organic, right? If they have any similarities in attribute to Species 842 then they could probably have a good advantage against the Borg. Otherwise, the Borg are infamous for their ability to adapt organic species into their collective.

Vong should win. Their Vonduun Crab Armor makes them basically immune everything. Blasters, explosions, slugthrowers(bullets) even to lightsabers. And their weapons are called Amphistaff's. Imagine a 2-3 meter long snake that is bonded to the Vong. It's semicrystalline and can turn into a spear, a whip, and a staff. The spear tip is poison, and as a whip it's poison as well. It couldn't even be cut by a lightsaber. And it can make a razor edge measured in atoms so it should cut through Borg with ease. Since the Borg have never adapted to kinetic strikes/physical trauma, this is a bad matchup.
Shipwise, the Vong's Dorsal Basin's literally make black holes on the surface of the ship to absorb incoming attacks of any variety. On top of that, they can drain energy directly from a ship's shields. And a group of them could make a gravity field to keep people or ships trapped, as well as rip ships out of hyperspace.
They were really OP and even immune to the Force to a scary degree. Even stuff like Telekinesis didn't work on them.
