They are channelling some of the energies from the HOTI. As mentioned above, they are totally different than the celestials.

Their bodies were transformed when harnessing some of the power of the HOTI, although they were only chanelling it, as they didn't have the ability to absorb it directly.

Thanos did try to absorb / contain it within his body, and failed, but in doing so released and bonded his consciousness with that of the infinite. He later re-created his body (and his ship too, amongst other things) when he decided it was time to become his old self once again.
