How would this fight play out? Haven't seen new x-men yet.
If he does well, how would it change things if sentinel's had Shaw's mutant gene.

Future Sentinels win obviously. They already do. Due to Mystique's shapeshifting abilities, they can access any mutant power to appropriately adapt to the mutant they are fighting presently.

I suppose so. They would have to use Xavier's TP.

A Quicksilver amped Sentinel would be ****ing unstoppable

What sort of power would they need to generate to counter shaw outside of TP?

Does anyone think the sentinels might of had certain limitations? What they did on the film was limited to countering ice by generating flames! countering fire by icing over, turning into colossus metal, showing enough strength for two to rip Colossus apart, morphing arms into blades, fingers into blades, firing intense blasts from their faces and a couple of other things if they could recreate super speed I'd think that would be the goto power. I'm not sure they could recreat powers like super speed, teleportation or TP/TK (which would have effectively eliminated the mutant threat quickly and efficiently) but seemed limited to physical manifestations of adaption by what was shown.

Shaw would probably just get frozen. Not sure if the beams or flames would work considering he planned on absorbing a nuke.

If they hit him with anything prior (like that incinerating head blast) couldn't he discharge it and free himself? He also showed a level of super strength when he fought Magneto so I'm not sure how that would factor in when it comes to freezing.

The Sentinels win obviously. Not only do they have far more powers but they could copy Shaw's.

They have a one power limit outside of using their face blasts so if they comps shaw wouldn't it just give a bigger chance to stalemate?

That could work unless he has a limit like Bishop did. Then again there was the nuke so that upper-limit must be really high. Also if they try hitting or pulling him apart, he might just built up enough energy to smash them to pieces.

However based on how they operate, they would eventually find a way to adapt to Shaw's power: probably freezing him.

I am guessing their programming prohibited them from accessing highly advanced mutant powers. I don't think that the despotic humans who created them would want them to become too powerful. Having thousands of Magnetos, Phoenixes and Storms would have been asking for catastrophe from their point of view.

This is speculation on my part of course.
