I adore anything by Gustavo Santaolalla, his Babel score was fantastic. I've never heard anything by the other, I don't think. So it's got to be Santaolalla obviously.

john murphy's "sunshine" score was amazing

i could be cliched and say anything by john williams simply because they are hugely memorable...but in particular the schindlers list score is phenomenally moving
