By punching him really hard. It's a fist fight I'm assuming, so Doom has his armour but can't use offensive spells, or fire lasers but is still pretty strong.

OR can't use death spores or tentacles, but retains his strength/durability.

Omega Red is suppose to be a 50 tonner with tenticles strong to fight Colossus. Omega Red wins imo
