Only other instance I can think of is when Kenobi took Anakins.

Obi-Wan took it because George Lucas needed Obi Wan to have it in A New Hope

And I doubt he really considered it a trophy... He thought he had finished Anakin off for good. Maybe he didn't just want to see such a noble weapon go to waste?

Kenobi's instance was probably born of sentimentality, not boastfulness/pride.

where was this in backlash? was it after the fight at the end?

I meant as in a Jedi taking anothers saber, rather than a trophy.
