Why does size matter when Odin's at least as tall and big as Thanos (Sometimes he's drawn as straight up towering over Thor and the rest) who also has a strongman build? And Asgardian's when depowered, are still very strong by normal human standards.

This comes down to skill, and as far as I've seen, Odin has demonstrated more.

He keeps on slashing to the left of Thanos whilst Thanos stands there and mocks him.

Doesn't the knife have to actually cut them?

Not sure about how Asgardian durability fares against normal cutting instruments, but a knife won't pierce Thanos's skin.
