Thanos wins. Both are pretty much equal "prep gods", imo, so their prep would cancel each other out. With no clear advantages to use for Doom against someone of Thanos's caliber he would lose. Badly.

Doom wins.
Simply using his time platform he could Bill & Ted Thanos quite handily. Of course he doesnt have to just rely on that.

Thanos wins.

As shown he monitors the likes of Doom and would be one step ahead.

Thanos and Doom both have time travel tech but I'd doubt they'd use it because of all the risk involved

But Thanos wins, the only thing Doom has going for him is his legion of fanboys who will suck him dry. Thanos is much smarter and has better tech despite Doom having some outliers here and there.
