I decided to look into the duel with his apprentice Maul and Savage. Many times it was sorted that he was toying with them.

Does this truly mean that Sidious could use Jar Kai "CuZ he is Sidious?"

Was is he a master at using two lightsabers?

Tbf, just because he tooled the Maul brothers doesn't mean that he's a jar kai master. His strength in the Force is so incredible that he could probably beat them with marginal technical ability.

That'd be the case if supplementary material for that fight didn't warn of his skills and deem him a master of all forms.

Not to mention Gillard claiming that he's mastered every weapon and every style, IIRC.
