A Jedi Dooku book, maybe detailing his final days as a Jedi and subsequent fall to the Sith (maybe also include some details of him and Sidious plotting the stuff leading up to AOTC).

Also, I'd enjoy reading a canon Boba Fett book, that either explores his bounty hunting career pre-ESB, or confirms that he survived the Sarlaac and explore his story after ROTJ.
