In Canon are there any reported instances of this happening? Perhaps it can help explain why Savage couldn't have just snapped Dooku and Ventress's necks despite catching them off guard.

The one off the top of my head is Darth Vader chocking Kento Marek, Starkiller's father. I'm sure he killed plenty of other Jedi using Force Choke too.

Oh, but you're talking about canon. I don't know. If video games count, then maybe Darth Vader. I think. I don't know. But I know that in the comics he did fight some jedi, and it wouldn't be too big a stretch of the imagination to say that he Force Choked some of them.
