In real life between the actual actors(not characters)? My money is on MJW. He spars with real professional fighters and has extensive knowledge of stand-up fighting as well as some BJJ knowledge as well(not sure what belt he is though). Not to mention, he dwarfs Yen in size.
Now Yen knows some BJJ too apparently but that Wing Chun style he has on display in the Ip Man films isn't very applicable.
White has actually done Kyokushin tournaments and obviously trains MMA.

From what I know, MJW has actually competed in full contact fights. I don't know if Donnie Yen ever did. Both are obviously masters of their craft but MJW is a whole lot bigger plus isn't exactly slow for his size.
I do know that MJW has trained in ground fighting. Not sure about Donnie Yen.
A more apt comparison would be MJW vs. Scott Adkins.
