Movieverse vs. EU feats

I recall Leland Chee addressing the disparity between EU speed descriptions and the duels we see onscreen.

Does anyone have his quote?

Don't have it, but I do remember a quote stating that the duels we see on film are actually slowed down for the audience and in real life we wouldn't be able to see them.
