As per her force abilities, it is reasonable to assume she would develop a high level of competence with telekinesis. She would also certainly expand upon her talents with precognition, perhaps opening some other sense based force abilities, such as perhaps shatterpoint. She'd also work on her force suppression technique which could perhaps lead her to other control techniques in the force, such as perhaps tutaminis.
As per her fighting style, I'd assume it would be Juyo. She seems ferocious enough to be an ideal Juyo practitioner. It would also make logical sense for her to wield Juyo, as wielding an unpredictable style when being able to predict your opponent's every move would provide an enormous advantage in combat.
Her armament I assume would include a lightsaber, but it also seems likely that her arsenal would include plenty of other unorthodox weapons she has familiarized herself with in her time as "The Huntress" It would also make her even more unpredictable against predictable opponents and allow her identity as a Sith Lord to remain unnoticed.
As per how she killed Zannah I'd assume it was in a fair fight. She seemed to pick up on the Rule of Two and Bane's principles really quickly, even throwing an apprentice out later on for said tenants, so I doubt pussying out would be her style. A fair fight seems even more likely for her when considering she could wait until she knows she's powerful enough to win, using her precog to determine this. She also seems perfectly specced to take Zannah down. Her precog and force suppression have got to be very effective against fighting a sorcerer class opponent, for whom surprises and force abilities are their bread and butter. Cognus, being able to handle Zannah's sorcery in this manner would go for the kill in bladed combat. Given my speculations on her style and armament, she would be a very unpredictable fighter, making her harder for Zannah's soresu to defend. Given Zannah's tactical retardation (we've all seen this) she'd make a mistake and Cognus would precog it and capitalize on it.
As per her role in the Grand Plan I doubt she'd do too much under Zannah's reign as master (given how stupid Zannah is). However once Cognus takes over I see it as very likely that she would do plenty to control the economy and various businesses given her advanced precognition and visions of the future.
This is my speculation on Cognus so far, and I'm curious to hear what you all think about it. I personally think I did a very decent job of it.

First I have to give a short amount of speculation about Zannah.
Zannah: Sabers
I believe, with Bane gone, Zannah will begin to practice other light saber forms. Soresu would still be her main form but I think she would pick up Niman and perhaps any one of the forms that emphasized speed. I think her saber skills would be pretty solid, but nothing over the top (compared to other Dark Lords of the Sith).
Zannah: Force
Zannah would continue to expand her sorcery skills. She would also pick up force lightning and other normal Sith skills. If she hasn't already, I think she would surpass Bane in force mastery by a large margin.
Zannah: Grand Plan
I think Zannah would focus on trying to re-establish all of the connections that Bane had created. She would probably push them further, but I think her main focus would be on training Cognus.
How Cognus takes the mantle
There seems to be a pattern in the Order of the Sith Lords.
Zannah killed Bane when she felt Bane strayed away from the Rule of Two and therefore the Grand Plan.
Gravid was killed when he became too focused on the light side and not the Grand Plan.
Tenebrous became too focused on Bith science rather than the Grand Plan and Plagueis killed him.
Plagueis became too focused on midiclorian manipulation and becoming co-chancelor instead of the Grand Plan and Sidious killed him.
I believe Zannah will delve too deep into Sith sorcery and eventually stray away from the Grand Plan as well. This is when Cognus will challenge her for the mantle. I think it will be a fair fight.
Zannah was roughly 30 years old when she became the Dark Lord of the Sith. I think she will train Cognus for 10-15 years and then Cognus would challenge her and take the mantle.
Here's how I envision Cognus when she challenges Zannah.
Cognus: Sabers
I think Cognus' former nature of being an assassin would make her take light saber training very seriously and she would be an expert duelist. I think she would be attracted by the elegance of Makashi and the ferocity of Juyo. Her advanced precognition would also give her an upper hand in most battles.
Cognus: Force
I'm not sure whether or not Cognus would be good at Sith sorcery. Either way, under Zannah's tutelage, I think Cognus would develop powerful mental defenses against Sith sorcery and mind tricks in general. Zannah and Cognus would be experts at stealth and concealing their force-sensitivity. Going by the categories listed here: http://starwars.wikia.com/wiki/Force_power, I think Cognus would have a strong mastery of many of the control and sense type of powers. Of course, being a Dark Lord of the Sith, she would eventually gain a strong grasp of alter powers such as force lightning, but that would come after killing Zannah.
Cognus: Grand Plan
I believe Cognus' forsight abilities will allow her to push the Grand Plan to new heights. I also believe Zannah and Cognus, both being supposedly attractive females, will practice manipulating others with their looks and through the force.
Zannah vs Cognus
Sabers: Cognus
I think Cognus will ultimately rely on her precognition and light saber skills to break Zannah's defenses and kill her.
Force: Zannah
I think Zannah will be able to fight through Cognus' force suppression but Zannah won't be able to call upon her more powerful abilities (tendrils and beyond).
In the end, Cognus will win with her light saber skills.

I see Cognus working on her ability to dampen the Force in others. Its her greatest strength and would be her best tool in fighting Zannah, who's mainly focused on Force abilities. Cognus is also an expert tactician as shown in her ambush of Bane. If Cognus can take down Bane without being trained with help, she can come up with a way to take out Zannah on her own given enough training.
As for the Grand Plan, Zannah never struck me as any more ambitious than training an apprentice. She never showed a plan beyond that.

Cognus's greatest strength is actually her farsight. Both Bane and her admit this. However I pretty much agree with everything else you said.
