Does anyone have the interview that states...
A fight between two Jedi/Sith combatants would be faster than the eye can see, and in the films are slowed down for the viewer? I heard it was stated by a choreographer of the films.

Apparently Nick Gillard states or implies it somewhere. I would assume it's in one of those stunt specials or something.

I don't think that that is necessarily true. The stormtroopers went to look at Old Ben and Vader duke it out

They were amazed, so it could've easily been anything, including the speed at which they dueled. And the script describes Vader's movements as "lightning-fast" in ANH.
