I would say Shimmra vs Luke, but I can't recall it too well. And most other fights in that era, to my memory, are pretty shit. Certainly everything after NJO, since Troy Denning and co. write shit fights.
Probably Malgus' fights in Deceived and Ventress vs Anakin in OCW. I can't think of anything else right now, I'm probably missing something.
