Aside from the Emperor, who is the richest being in canon?
I would guess Dooku, but is there anyone else who can rival his wealth?

I don't think anyone's wealth touches Dooku's in canon.

Dooku has been stated to be one of the wealthiest characters in the galaxy indicating people rival him we just don't know who.
So I go with Dooku.

This does bring up an interesting question. Being Dooku died in ROTS do we know in canon what happened to his fortune? I'm sure there was somebody who inherited the wealth but all of his know realatives are dead that we "know" of.

I don't think any single individual in canon has been stated to possess the wealth of Dooku.
Like juggernaut said, he was stated to be "one of" the wealthiest, we just don't know who else is on that list.
