My favorite fights will always be the ones from the WMATs back in the original DB. That's when they focused a lot more on fighting style/technique, as opposed to "z0mg!!! Look at teh powaaa!!!"
Aside from that, some that come to mind are(in no particular order):
SS2 Gohan vs. Cell
SS1 Goku vs. Freeza
SS2 Goku vs. Majin Vegeta
Vegito vs. Boohan
UI Goku vs. Jiren
Broly vs. Gogeta
The best fights tended to be in the pre Z era, before power levels and plot devices became over blown.
In no particular order:
1. Jackie Chun vs Goku.
2. Tenshinhan vs Goku 1.
3. Piccolo Sr. vs Goku.
4. Ma Jr. Vs Goku.
5. Radditz vs Piccolo and Goku.
The first four are all about the techniques, and how the fights told a story, much like a wrestling match.
The last was all about the strong narrative. 5 just may be one of the best of the franchise, period.

About 70% of the anime fight is filler though. The broad strokes happen in the manga, like Piccolo's attack where he surrounds you with ki balls, and #17 shows off his force field, but its really only a few panels of fighting in manga form. Barely even a page.
Even despite that, I don't like fights that end in a stalemate.
