Could she theoretically control the minds of the two without GREAT telepathic resistance (Colossus and Thing) to take the helmet off of the Juggernaut, leaving him open to her assault, and then make those three all attack the hulk?

Well first they would actually have to take his helmet off and he has laready 3 shotted thing and one shotted Colossus.

Jean would be trying to take off jugg's helment and get bum-rushed by hulk, piotr and thing. Hulk's already resistant to telepathy and mind control, and proffessor X and Mr. Fantastic could make thing and collosus telepath helments easy.

You mean besides the fact that none of them can fly, and certainly can't travel as fast as her? And that she's already gotten past Juggernaut's helmet in the past?

All she has to do is stay out of reach until she decides how she wants to take them down. The most difficult would be Hulk. But by the time it got down to just Hulk, it would be Jean, Colossus, Thing and Juggernaut vs Hulk.
