Is there a way to do this? Like, could I send myself an e-mail but make it appear as though I'm sending it to someone else?

Yes. Spammers do it all the time. It is a header edit. This is called spoofing. Google it.

Yes, its possible.
That is why most people use SPF / DomainKeys to verify the authenticity of the sender.
