I'm tied between Luke and Obi-Wan.
Luke because he really stepped up and faced his fears even though he didn't have the training he really needed.
Obi-Wan though, is going to be just ahead I guess, because he is put in the roughest spot in the trilogy. When Anakin goes dark, it's his responsibility to kill him, and he almost does. And in the OT, the way he deals with Luke, and the way he accepts his death, and keeping Luke on the right path etc.

I dont know I liked Qui-Gons personality best....he was deeper than any of the jedi ever knew...well Yoda figured it out in the end I guess since [SPOILER - highlight to read]: he became Qui-Gons apprentice...
