Obi not because he is most powerful, not because he did more impressive things then the rest but because he survived and lived.
He had killed or thought he had killed somebody he considered his brother. Obi went threw more pain then anybody else in all those movies combined and he still survived and held on. He faced Anakin after just seeing his betrayal and he stayed strong when most people would have just crashed completely...
He may not be the most powerful Jedi, but he had an incredible will and devotion to the Jedi.

Physical pain disappears, especially when one is blinded with hate. Emotional anguish, as Obi-Wan suffered... his mentor slain, his padawan betrayed everything Obi-Wan had fought and suffered for... the crimes he was helpless to prevent... The nagging guilt that Darth Vader may in fact be his mistake, his shortcoming.
The idea that Obi-Wan gets up every day and doesn't have PTSD means he's made of tougher stuff than Anakin or any other Jedi or Sith listed here.
Obi-Wan: toughest eomtionally. Despite every position he's put in, despite all of the times he could give up(and understandably so,) he doesn't, his faith improves that much more. Obi-Wan "killed" his best friend and brother.
Darth Vader/Anakin is the physically toughest because, well watch ROTS and you'll see. He took an ass whoopin.
