The fight wouldn't be nearly as fast as you think it would.
Dooku is too skilled for Vader to take him down quickly.
Talon and Maul would be a MUCH faster fight.
Maul is way better.

Literally every Jedi he fought during the Jedi Purge except for that one scan from the perspective of a stormtrooper.
And Ben Kenobi, Galen Marek, and Starkiller, obviously.
Now that I think about it, I can't think of more than four Jedi that Darth Vader handled without being humiliated at one point or another.

Legends Vader has been tagged by Sha Koon, Kai Hudorra and ESB Luke, etc. He's struggled with Ben Kenobi, who's considerably inferior to Dooku.
