Wasn't prime assaj being ragdolled by kenobi on a ds nexus? Maybe there was context of some kind but irrc she was trying to kill him while enraged.
Even if Dooku can't straight up ragdoll ahsoka(which i guess you could argue based on her ship feat), he can absilutely do so against ventress. Given his performance vs anaking and kenobi in season 6, I'd say the duo's only hope of victory here is tiiring him out, but ventress lack's anakin's strength and ahsoka's ataru could be hard countered by dooku much the same way kenobi's was.
