Mercer was pretty much ground zero when a nuke went off and he regened from a crow. He's even more powerful by the time of Prototype 2. And yes, Adamantium has cut Thor.
Its stated somewere the bio organic metal is the hardest toughest metal known to man so its kind of like admantium if not stronger maybe so, if he covered his body in armour and used his whip fist i could see him tanking most of thors attacks and then whip fisting his head clean off
If Thor does vaporize him it should count as a win even if he can regen as a pile of blood. Once he is down it should count, unless he trains birds to land in his goo every time he might need to regen from nukes or nuke Equivalent incidents.
About him getting his head cut off. He has high reaction speed.

He's just as quick imo and the armour he surrounds his entire body with is the same bio organic metal he forms his giant blade with, apparantly the hardest metal or hardest solid known to man so he could take a few of his hit an then attack him with something else and mercer has range to that whipfist is dangerous, even though mercer stands a chance, could go either way, if thor got to close he's getting consumed an ate, or he's getting sliced up, if thor plays it smart an keeps far he's got it, depends how the fight prevails
mercer can absorb organic matter but has not taken on or absorbed a god or anything other than human or already infected things infected no less with the same crap in him...oh and birds.

If anything I saw a real world tv program that stated people have the generic ability to generate nails and the such as hard as diamonds and even improving upon that doesn't make you equal to those two fictional materials.

Alex is being overblown here. He was reduced to paste by that nuke, it's not a durability feat, and he actually was shielded from the blast by billions of gallons of water, probably the best shield someone could hope for from something like that. Even so, this wouldn't help him against Thor.
