I was going to post this match-up but you beat me to it.
I'll say Saya wins this. What Blade needs an arsenal of weapons to do, she does better with just her sword (and the odd improvised weapon).
Plus Blade is a great swordsman, no question, but I think Saya has an edge (no pun intended), since again Blade uses a wide range of weapons while she basically uses just her sword. So yeah, in a straight-up sword duel I think she takes it.

Blade, he shows greater speed and skill overall, those Saya fight scenes where poor and she was killing nothing more than running morons, while Blade has taken down several bad-asses.
Blades' fight with the two ninja-vamps in Blade II excel in speed and skill over those vids.
Running morons? Dude, they were attacking her from all angles.

Also, Saya is 400 years old, far more experience. I'll go with that over Blade any day of the week. And she took a gunshot to the stomach and it didn't slow her down a bit, not til she bled out. AND she regens almost instantly with fresh blood.

She could be 400 trillion years old, doesn't matter, it's what she's shown doing, which isn't on par with Blade and her opponents weren't on par with what Blade took down, super-Frost, ninja-vamps, Nomak and Dracula.
She's tough, she has that. So is Blade and he has body armor, he's taking shots and nothing happened.
She had more than one fight scene, bro, she takes on sword wielding demons, a horde of them. Check it:
Blade is never shown taking on that many with only his sword, and winning.

Yes, and he did it with sword, shotgun, machine gun, and silver spikes. Not to mention UV grenades and the blood pack.
Saya does it all alone, on her own, with only a sword. No guns, just a blade and her ****.

Blade has killed plenty with his sword and far tougher opponents; on top of this, he's shows more skill, speed and swordsmanship in his fight scenes (probably because Snipes' a trained martial artist), really, there's no debate here.

Look at 4:00, there are at least 30 Demon ninja coming at her. She takes them head on, she shows speed and swordsmanship that trumps Blade in every possible way. You put Blade in her place at 4:00 of the vid, or in the alley fight scene, just with his sword, and he gets pwned.
Blade, without his guns and other weapons, is not near as deadly as Saya.
Then there's the scene at 5:10 where she runs 30 feet straight up a tree. Blade never, not ever, did anything like that.
Blade is good, but Saya is better.

Uh oh, I totally forgot this scene. Here's where Saya takes on her king shit Demon mother:
Obvious superior swordsmanship.
Not to mention at 3: 02, is that some Resident Evil Alice TK shit I see?
And look at 5:10, when she leaps into the wooden tower, that's some uber Crouching Tiger, Hidden Dragon shit.
Aaaaaaaaand at 4:18, when her Demon mother is stabbed by the white girl, Saya uses her TK to blow the shack into splinters, she is blown a hundred feet away, and emerges unscathed.
I really don't see how Saya loses here. Superior swordsmanship, her TK abilities, her athleticism (Which is superior to Blade, judging by the scene at 5:10), comparable damage soak.....Add on 400 years experience, and......well.......Saya eats his lunch.

Would be a good fight. I think Blade shows faster blade work is less efficient. Saya pretty much 1 hit kills all her opponents (actually very accurate in terms of realism as most ancient sword fights of the type in Japan were settled in single strikes...Many masters even specialised in killing strikes straight from unsheathing the sword...no penis joke intended)
Blade obviously has it in terms of strength. I think that several of his single opponents would wipe the floor with Saya's opponents.
Blade obviously also has it in intelligence. He's shown the resourcefulness in fights to defeat opponents who would otherwise have defeated him in a straight up fight.
Azumi would be a better opponent for Saya (although Azumi fought far greater numbers) as stylistically they are both similar
Saya compliments her sword fighting with martial arts as does Blade and he shows far greater ability in that regard. It's safe to assume it would come into play as both showed it during their sword scenes.
Blade also showed greater agility and range of movement.
Saya did kill more opponents but Blade obviously has the more experience in 1-on-1 fighting
