Well, he managed to decapitate Sentinels in the comics, and there's sort of a nod to that in the film in the war room, but as this is movies only and comic feats can't come in there's not really anything showing him capable of taking down a terminator.
T-1000 samples Wolverine's Adamantium. Technology assimilates the metal of Wolverine. Now, T-1000 becomes Adamantium liquid Terminator. Wolverine is screwd.
Just playing devil's advocate here, but T-1000 looked pretty knocked out by the end of T2.
Also it was never the same again after the liquid nitrogen/combatative wear-and-tear and was destabilzed, as shown by its system failures such as cloaking and speed etc being messed with.
When did Wolverine bleed to death? I musta missed that...
Unless Wolverine has a grenade launcher/liquid nitrogen/molten steel trap handy, I don't see how he's gonna last.

Via constant regen, and out living whatever powercell that the T-1000 has..? Lets say that the Admantium can keep slicing up the T-1000 also, causing the kind of wear and tear on the cyberdynian that would eventually defeat it, and he knows where there is a foundry or a volcano, or knows how to get to antarctica, its a win.
How would he get him there? And doesn't he need to drink, piss, shit, sleep? Or has Wolverine been transformed in to a robot recently? And how's metal cutting through liquid metal going to damage the T-1000 when it's shown that it can withstand gunfire, explosions, burning 18 wheelers, blunt trauma. The only thing that actually seemed to weaken it was extreme cold. If Wolvy gets him to such a place, he's just as much at risk as the T-1000.
And I don't know about comic Wolverine, but the movie version isn't the invincible super god he probably is in print form. Melt him, freeze him, shove a pointy metal finger through his eye and scramble his brains around... all good.

It matters not. Since hes pretty much immortal and has infinite regen... T could try to murder him in his sleep and he'd wake up fine the next day...he could eat his own flesh to survive and it would regen. In antarctica or Siberea it WOULD be extreme cold.
He could freeze T with liquid nitrogen (available in most science labs and randomly in Tanker Trucks on freeways in Terminator films) and jump in the X-Jet and dump T from the air into said inhospitable environment.
Molecular acid, or Lava are also options that Logan could explore.
Wolverine was in trouble when Deathstrike was bleeding him to death. Also, Wolverine needs to eat and sleep just like any other human. Eating his own flesh is one of the most ridiculous things I've ever heard, but even if he could do that, he still needs the time to eat his flesh, and that's gonna be pretty hard if the T1000 is beating up on him.
The T1000 doesn't tire, doesn't need to eat and sleep. Doesn't even feel pain (except in the melting pot).
And what wear and tear are you talking about for the T1000? At the end of the movie in T2 just before he got shot by the grenade launcher and dropped in the melting pot, he still looked good as new. There wasn't any change in speed or cloaking. He was able to copy Sarah Connor's form fine.
It would take liquid nitrogen just to freeze and therefor knock out the T1000. All it would take to knockout movie wolverine is a shot to the head.
