Then why does Mace say he can't beat Vastor, lose to him, and then beat him with trickery/an equipment advantage?

Because Mace actually counters his force hold successfully, which isn't exactly an indication that he would be ragdolled or anything( unless there is another instance in the novel where Vastor ragdolls him legitimately, I don't remember if there is). Mace has also called himself a "padawan" compared to Yoda, when we know for a fact that they are on a similar level.

Sure Mace counters some of Vastor's moves but Vastor still gets more hits in on aggregate.
