Well, Thor would have no issues wrecking Ego's avatars, or having the raw power needed to destroy the core. The question is whether he can deal with Ego warping the landscape, turning the terrain into giant tentacles and stuff that Thor will have to fight through. IIRC, Mantis needed to shut Ego down for a bit to deal with those. We don't have the best idea of just how strong they are. They were able to hold the Guardians, but none of them are even remotely as strong as Thor is.

If Thor knows to destroy Ego's core then he wins. He has the power of bifrost now and can simply teleport to the core. If he doesn't know about it then he will eventually get ground down by everything the planet throws at him.
That said, Ego being defeatable by destroying his Core isn't common knowledge (I certainly don't see how Thor would know this), so Thor shouldn't know this...
Besides, Ego casually wiped out an armada of ships from that Golden Race like it was nothing...
