At her peak :

1. What are her full force powers and abilities ?
2. What light saber form is she most dominant or proficient in and what forms does she know(all 7) ?

1.) Ahsoka was still alive after RotJ, and everything so far indicates that she was still alive as of the ST. We don't really know the full breadth of her power(especially in that era), but her most impressive feat thus far is probably when she [albeit momentarily] blocked Palpatine's attack in TWBW.

2.) She seems to use a Jar'Kai variation of Ataru.
